Recipe: Chocolate Pecan Pie

Makes 2 9-inch pies

  • 4 eggs
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 cup flour
  • 1 cup sweet butter, melted and cooled
  • 2 cups chocolate chips
  • 2 cups chopped pecans
  • 2 Tablespoons Bourbon
  • 2 teaspoons vanilla
  • 2 unbaked pie shells
  • Recipe for shell:
    • 3 cups sifted flour
    • 1 tsp. Salt
    • 1/2 lb. butter, unsalted cold
    • 1/2 cup ice water

  1. Place the flour, salt and cold butter into the food processor and pulse until the butter is the size of peas. Add the water slowly and pulse until in comes into a ball… do not over work.
  2. Shape into two discs and wrap in saran wrap. Chill 1/2 hour.
  3. Make the filling: Beat the eggs and sugar together in a mixing bowl. Add the salt and flour and melted butter. Add the chips, nuts, bourbon and vanilla. Roll out the dough and place in a greased pie plate flute the edges. Pour the filling into the shell and bake at 400 degrees for the first 5-10 minutes to set the crust.
  4. Turn the oven down to 375 and finish baking about 30-35 minutes until the filling is set.
  5. Cool and enjoy with whipped cream.
